As I promised, here is a good potato soup recipe which will put lots of those fresh potatoes to use after the harvest. Living in Siberia, I often make this on cold days to warm us all up real good on the inside!
HOMEMADE POTATO SOUP
4 cups peeled, cubed potatoes
1 cup (3/4 inch slices) celery ( I used approx.1 tsp. of dried celery flakes)
1 cup coarsely chopped onion
2 cups water
2 tsp. salt
1 cup milk
1 cup whipping cream
3 Tbsp. butter or margarine, melted
1 Tbsp. dried parsley flakes
1/4 tsp. black pepper
Combine potatoes, onion, celery, water, and salt in large Dutch oven. Simmer covered, about 20 minutes or until potatoes are tender. Remove from heat. Mash mixture with a potato masher, leaving some vegetable pieces whole. Stir in remaining ingredients; return to heat and cook, stirring constantly, until soup is thoroughly heated. Serves 6.

ReplyDeleteI remember your family giving me a Matryoshka doll when your family came and visited my church, it meant a lot to me that you would think of me even when I was a very young child!! I still have that doll and it reminds me of how sweet and kind you and your family areP! May God continue to bless you as you serve Him in Siberia!
